Optimal drinking window: 2026 - 2029
Fresh and vibrant, this Crémant delivers a burst of crisp green apple and zesty citrus, with juicy fruit on the palate and a long, refreshing finish. Made using the same traditional method as Champagne, it offers that same elegant sparkle - just without the Champagne price tag. It’s a fantastic pick for a top-tier aperitif or any celebration that calls for bubbles.
Domaine du Bicheron hails from Péronne, in southern Burgundy’s Saône-et-Loire region. The estate is proudly committed to quality, having signed the charter of independent winegrowers—promising not just great winemaking, but also a deep respect for tradition, craftsmanship, and sharing the joy of their wines with others.
This is a Crémant built for immediate pleasure rather than long cellaring, showing its honeyed, brioche character beautifully right now. The primary fruit will remain vibrant for the next couple of years, but don't expect it to develop the complex tertiary flavours of aged Champagne. The lovely balance between freshness and richness that makes it so appealing today will gradually shift towards more toasty, yeasty flavours, though it should remain thoroughly enjoyable until 2029. After that, you risk losing the bright fruit that gives it such charm.
What the critics say:
"We’ve offered some wonderful still white burgundies from this producer before but the Domaine du Bicheron Crémant de Bourgogne Blanc de Blancs NV is the first sparkler of theirs that we’ve offered and it’s a gem. Produced in the traditional method from 100 per Chardonnay, it’s fresh, lively and ever so slightly toasty. More than acceptable on its own, it’s perfect as the base of many a festive cocktail and is far better value than those dreary BOGOF champagnes you see in the supermarket at this ghastly time of year."
"Wonderful honey laced brioche on the nose, sweet and round. This is definitely less acidic than many of the others, it has a richer, deeper, more medium-bodied texture with grip and depth of lemon, orange, honey, apricot and peach flavours. A really interesting profile from a Blanc de Blancs made with Chardonnay. Supple and refined, if not a classic high-acid, super refreshing style. This would pair excellently with heartier foods, white meats, fish dishes and creamy pasta foods."
Tasting Notes
AppearancePale gold with a persistent, fine mousse and elegant string of bubbles.
NoseCrisp green apple and lemon zest provide the fresh foundation, whilst gentle honeyed brioche adds warmth and complexity. There's a subtle toastiness that speaks to quality lees contact without overwhelming the fruit.
PalateMedium-bodied with surprising depth for a Blanc de Blancs, showing layers of citrus, stone fruit, and that appealing honey-laced richness. The texture is creamy yet maintains bright acidity, creating excellent balance between freshness and substance.
FinishLong and satisfying with lingering citrus and a gentle toasty note that invites the next sip.
Overall impressionA sparkler that punches well above its weight, offering genuine complexity at a fraction of Champagne's cost.
Food Pairings
In southern Burgundy, this style of sparkling wine traditionally appears alongside the region's famous escargots de Bourgogne, the richness of the bubbles cutting through all that garlic butter beautifully. Locals might also pair it with gougères, those airy cheese puffs that are practically designed for sparkling wine, or with the area's excellent goat's cheeses from the nearby Mâconnais. During harvest time, it's the perfect companion to coq au vin blanc or a simple plate of jambon persillé, the wine's honeyed depth playing wonderfully with the local charcuterie.
We think this wine would go well with
Serve well-chilled at 6-8°C in proper flutes or tulip-shaped glasses to concentrate those lovely brioche aromas. No need to decant, obviously, but do give it a gentle twist rather than a dramatic pop when opening to preserve those elegant bubbles. If you're making cocktails as Jonathan Ray suggests, this has enough character to stand up to a splash of cassis for a proper Kir Royale.
The vineyards around Péronne in southern Burgundy sit on limestone-rich soils typical of the Saône-et-Loire, providing the mineral backbone that keeps these Chardonnay-based sparklers fresh and lively. The slightly warmer climate here compared to northern Burgundy allows the grapes to ripen fully whilst retaining the crisp acidity essential for traditional method sparkling wine. These conditions create bubbles with more body and richness than you'd find further north, yet still with that classic Burgundian elegance.
Crémant de Bourgogne represents Burgundy's answer to Champagne, made using the same traditional method but from vineyards across the region rather than just the hallowed grounds of Champagne itself. The appellation allows both Chardonnay and Pinot Noir, though this Blanc de Blancs uses only Chardonnay for maximum elegance and finesse. The rules demand the same careful riddling and disgorgement as Champagne, but the terroir of Burgundy gives these wines a slightly richer, more honeyed character. It's serious sparkling wine at a fraction of the Champagne price.
