Optimal drinking window: 2026 - 2029
Weingut Stadlmann Grüner Veltliner 2022 is a clean, mineral-driven take on Austria’s classic grape, shaped by the limestone soils of the Thermenregion rather than the richer loess soils found elsewhere.
In the glass, bright and focused - green apple, citrus and a touch of melon, with that signature Grüner hint of white pepper. There’s a lightly chalky, almost salty edge running through it, giving the wine a more restrained, precise feel than many fuller styles. The palate is crisp and high in acidity, finishing fresh, zesty and very drinkable.
Fermentation is done with minimal intervention, and the wine is bottled young to preserve its freshness and purity. Overall, it’s a classic, no-frills Grüner that's bright, mineral and easy to pair, especially with fish, salads or lighter dishes.
This 2022 Grüner Veltliner is currently showing at its peak, with primary fruit flavours perfectly balanced against the limestone minerality. Over the next year or two, we expect the bright citrus and apple notes to integrate further with the chalky backbone, creating a more harmonious but still fresh profile. By 2028-2029, the wine will likely show more honeyed development whilst maintaining its characteristic pepper spice, though the vibrant acidity that makes it so food-friendly now will begin to soften. This isn't a style built for long cellaring - its charm lies in its youthful precision and mineral clarity.
Food Pairings
In the Thermenregion, this style of Grüner Veltliner would traditionally accompany the local freshwater fish from the Danube, often prepared simply with herbs and lemon to complement the wine's clean, mineral character. The region's proximity to Vienna means it also pairs beautifully with the capital's lighter fare - think schnitzel with a squeeze of lemon, asparagus dishes during spring, or the local white asparagus that's celebrated throughout Lower Austria. The wine's crisp acidity and mineral backbone make it perfect with goat's cheese from the surrounding countryside, whilst its restrained character won't overpower delicate vegetable soups or herb-crusted trout.
We think this wine would go well with
Serve well-chilled at 8-10°C to highlight the wine's crisp, mineral character and preserve its fresh acidity. No decanting is needed - this style of Grüner Veltliner is designed to be enjoyed immediately upon opening. Use a medium-sized white wine glass with a slightly tapered bowl to concentrate the delicate aromatics whilst allowing the mineral nuances to develop. The wine will hold its freshness in the glass for several hours once opened.
The Thermenregion's limestone soils create a distinctly different style of Grüner Veltliner compared to the loess soils found in other Austrian regions. This chalky, mineral-rich foundation provides excellent drainage whilst imparting a characteristic salinity and tension to the wines. The continental climate with warm days and cool nights helps preserve the grape's natural acidity, whilst the limestone adds that signature chalky backbone that runs through Stadlmann's wines.
The Thermenregion, south of Vienna, is known for producing more restrained, mineral-driven wines than Austria's other major wine regions. Whilst the Wachau and Kamptal focus on power and concentration, the Thermenregion's limestone soils favour precision and elegance. The region specialises in both white wines like Grüner Veltliner and indigenous varieties like Rotgipfler and Zierfandler, but it's the distinctive mineral character from the limestone that sets Thermenregion wines apart from their more famous neighbours.
The 2022 growing season in Thermenregion brought exactly the sort of drama that keeps Austrian winemakers on their toes. Spring arrived early and warm, pushing budbreak ahead of schedule, only for late frost to nip at the vines in April. Summer heat waves tested the region's ability to retain freshness in their whites, whilst the vineyards closer to the Pannonian Plain felt the pressure most acutely. What saved the vintage was September's return to cooler, drier conditions, allowing harvest to proceed at a measured pace and giving the grapes time to regain their composure.
We think 2022 produced wines with more immediate charm than structure, particularly the Zierfandler and Rotgipfler that define this corner of Niederösterreich. The region's signature white blend shows lovely fruit purity right now, though without the mineral backbone that makes great Thermenregion age gracefully. Pinot Noir fared better than expected given the heat, delivering wines with genuine red fruit character rather than the jammy concentration we feared. These are drinking beautifully now and will reward early consumption over extended cellaring.
