Primosic's Metamorfosis represents the serious side of Collio winemaking, where this respected Slovenian family creates their most ambitious red blend. This 2015 vintage brings together the classic Bordeaux varieties in the rolling hills near the Slovenian border, where the region's famous ponca soils and cool continental climate create wines of surprising elegance and longevity.

At eleven years old, this wine has moved beyond its youthful exuberance into a more refined phase, showing the tobacco and leather complexity that develops when Cabernet Sauvignon finds the right home. We think it's drinking beautifully now but has another decade of graceful evolution ahead, making it perfect for those who appreciate the intersection of Italian terroir and international grape varieties.

This 2015 is currently in its prime drinking phase, having moved beyond primary fruit into the more complex secondary stage that develops after eight to ten years. The tannins have softened considerably but retain enough structure to carry the wine for another decade. Over the next five years, expect the tobacco and leather notes to become more pronounced while the fruit remains present but more integrated. The wine should hold its peak until around 2032, after which it will begin a gentle decline, though it may surprise with its longevity given the quality of the vintage and the producer's track record.

Tasting Notes

AppearanceDeep garnet with brick edges showing its maturity.

NoseDark cherries and blackcurrants layered with tobacco leaf and cedar from eleven years of bottle age. There's a mineral edge from the ponca soils and hints of dried herbs that speak to the continental climate. The oak has fully integrated, providing structure rather than flavour.

PalateMedium to full-bodied with the firm backbone typical of Collio reds, showing dark berry fruit wrapped in fine-grained tannins. The acidity keeps everything fresh despite the wine's maturity, while secondary flavours of leather and forest floor add complexity. There's a distinctly European restraint that sets it apart from New World Cabernet blends.

FinishLong and savoury with lingering tobacco and mineral notes.

Overall impressionA mature Bordeaux-style blend that proves international varieties can find their voice in Friuli.

Food Pairings

In Friuli, this would be paired with the region's hearty mountain cuisine: wild boar ragu with pappardelle, or the famous San Daniele prosciutto aged in the local Alpine air. The wine's structure makes it perfect with aged Montasio cheese, while its herbal notes complement the rosemary and sage that appear in local braised meats. During autumn, locals might enjoy it with venison or the region's excellent mushroom dishes, particularly porcini risotto.

FAQs

What does Metamorfosis taste like?

It's a mature Bordeaux-style blend showing dark berries, tobacco, and cedar with the refined structure that comes from eleven years of bottle age. The ponca soils of Collio add a distinctive mineral backbone.

When should I drink this 2015 vintage?

It's drinking beautifully now and will continue to evolve gracefully until around 2035. The wine has moved past its youthful phase into elegant maturity.

What food pairs well with this wine?

Think rich, savoury dishes: aged hard cheeses, wild boar, venison, or hearty pasta with mushroom ragu. The wine's structure can handle robust flavours while its elegance won't overwhelm more refined preparations.

Should I decant this wine?

Yes, decant for 45 minutes to an hour. The wine benefits from aeration to soften its tannins and release its complex secondary aromas of tobacco and herbs.

How does this compare to Bordeaux?

While made from Bordeaux varieties, it shows the distinctive mineral character of Collio's ponca soils and the restraint typical of northeastern Italian winemaking. It's more elegant and less powerful than most Left Bank Bordeaux.

Is this wine worth cellaring further?

It's drinking at its peak now but has another 8-10 years of graceful evolution ahead. If you enjoy more developed, secondary flavours, drink it soon. If you prefer wines with more tertiary complexity, give it a few more years.
