Legend has it that back in the 18th century, Château Carbonnieux’s white wine was so crystal-clear that it made its way to the Sultan of Constantinople’s palace under the guise of "mineral water from Carbonnieux".

A blend of Sauvignon Blanc and Sémillon, the Sauvignon brings energy and brightness, while the Sémillon adds roundness and depth. When young, it’s fresh, crisp, and bursting with floral and citrus notes. As it ages, it takes on richer layers of dried and candied fruit, making it an incredibly versatile food wine. This elegant white is a perfect match for cooked or raw seafood, foie gras, white meats, or even spiced dishes.

This 2015 is entering its secondary phase beautifully, where the primary citrus fruit has integrated with emerging honeyed and nutty complexity from the Sémillon. The racy acidity that defined its youth now provides structure for more sophisticated flavours to develop. Over the next 2-3 years, expect the mineral character to become more prominent whilst retaining freshness, with subtle spice and dried fruit notes appearing.
