Optimal drinking window: 2026 - 2028
Paco Molina Cava Brut is a bright, pale yellow sparkling wine with a fresh and inviting character. On the nose, you’ll find soft aromas of pear and apple, layered with delicate floral notes and a subtle touch of creaminess. It’s lively and fruit-forward on the palate, with a refreshing energy that leads to a light, smooth, and thoroughly enjoyable finish.
Made by the Cusiné family - best known for their work at Parés Baltà - this charming organic and biodynamic Cava is crafted using the traditional method. It’s a classic blend of Xarel·lo, Macabeo, and Parellada. Each grape brings something special to the glass: floral lift from Xarel·lo, vibrant fruitiness from Macabeo, and structure from Parellada. The result is a well-balanced, easy-drinking Cava that’s perfect for any occasion.
This is a Cava designed for immediate pleasure rather than development, showing its best fruit-forward character right now. Over the next year or two, the primary apple and pear flavours will remain vibrant, though the floral notes may become more integrated. Beyond 2028, the wine will likely lose some of its fresh zip and the bubbles may become less lively, so we'd drink it whilst it's showing this lovely balance of fruit and energy.
Food Pairings
Catalans would pair this naturally with pa amb tomàquet, the simple perfection of toasted bread rubbed with garlic and ripe tomatoes, drizzled with good olive oil. It's equally at home with jamón ibérico, marcona almonds, or escalivada, the smoky roasted vegetable salad that's a staple of Catalan tables. The wine's fresh acidity cuts through the richness of butifarra sausages, whilst its fruit-forward character complements seafood paella, particularly when made with prawns and mussels from the nearby Mediterranean coast.
We think this wine would go well with
Serve well-chilled at 6-8°C in flutes or white wine glasses to showcase both the mousse and the aromatics. No need to decant, but do open just before serving to preserve the effervescence. If you're feeling fancy, chill the glasses beforehand, though it's hardly essential for a wine this approachable and forgiving.
The vineyards sit in the Penedès DO at elevations between 200-400 metres, where Mediterranean warmth meets cooling Atlantic influences. Clay-limestone soils retain moisture whilst providing excellent drainage, crucial for the traditional Cava varieties. The continental climate with its significant diurnal temperature variation preserves the crisp acidity that gives this Cava its refreshing backbone and allows the fruit flavours to remain bright and focused.
Cava DO spans multiple regions but finds its heart in Catalonia, where the traditional method creates Spain's answer to Champagne using indigenous varieties. The regulations require a minimum of nine months on lees, though many producers exceed this. Unlike Champagne's chalk soils, Cava's diverse terroir ranges from Mediterranean coastal plains to high-altitude vineyards, creating a style that's typically more fruit-forward and approachable than its French counterpart, with less emphasis on autolytic complexity.
