Established in 1880, Maison Huiban began as a supplier of grapes to larger Champagne houses. Over time, the family transitioned to producing their own wines, combining their deep-rooted expertise with a passion for craftsmanship. Since 1991, Isabelle Huiban and her husband Eric Ammeux have led the house, expanding its vision and refining its offerings. Paul Augustin Champagne, named in honor of their sons, showcasing elegant Chardonnay from the renowned terroir of Fontaine-sur-Ay.

This non-vintage Champagne is designed to be enjoyed upon release, showing its best fruit-forward character now through 2030. Over the next 2-3 years, the primary apple and citrus flavours will integrate further with the yeasty complexity from lees contact, creating a more harmonious whole. Unlike prestige cuvées, this style won't develop significant tertiary complexity, instead maintaining its fresh, aperitif character throughout its drinking window. Beyond 2030, the fruit will begin to fade and the wine may lose its characteristic freshness and vibrancy.
