Billecart-Salmon's Blanc de Blancs represents everything we love about this meticulous Champagne house. Crafted entirely from grand cru Chardonnay, this cuvée showcases the purity and precision that has made Billecart a favourite among those who prize elegance over power.
The house's famously gentle approach, including cold fermentation and extended lees ageing, creates a Champagne of remarkable finesse.
This cuvée is drinking superbly now, with its primary citrus fruit perfectly integrated with secondary brioche and almond characters from lees ageing. Over the next 5-7 years, expect the fruit to become more honeyed whilst the mineral backbone grows more pronounced. The mousse will soften slightly but should remain elegant throughout the drinking window. Unlike vintage Champagnes, this non-vintage cuvée is designed for immediate pleasure rather than dramatic evolution, though the finest examples can surprise with their longevity. After 2035, the fruit may begin to fade whilst the biscuity complexity takes over.
