This 2022 is drinking beautifully now, with its primary citrus and floral character in perfect harmony. Over the next year, expect the fruit to soften slightly whilst gaining a touch more complexity, though the essential freshness will remain. By 2029, those delicate aromatics will begin to fade, and whilst the wine will still be pleasant, it won't show the vivacious charm that makes young Gavi so appealing.

Food Pairings

In Piemonte, this would be the natural partner to baccalà mantecato, or fritto misto from the nearby Ligurian coast. Locals pair it with Vitello Tonnato, thinly sliced veal served cold with a creamy tuna sauce; the wine's acidity cuts through the creamy sauce. It's also traditional alongside Tajarin Pasta which is a simple, fine egg pasta dressed in butter and herbs, or Toma Piemontese, the soft-ripened, slightly savoury cow's milk cheese.
