Chilworth Manor's Classic Cuvée 'The Bishop' is produced from vineyards planted beside the historic Chilworth Manor site in Surrey, a property with over 1,000 years of recorded history. The cuvée is named after Odo, the Bishop of Bayeux and former owner of the Chilworth Manor (having been gifted the estate by his brother William the Conqueror..!)

Having undergone a second fermentation in bottle as part of the Classic Method of sparkling wine production, this wine has spent over 60 months on the lees before disgorgement. The result is a structured, dry site-specific English Classic Cuvée with firm acidity, fine mousse and a clear focus on balance and ageing potential.
