Philippe Pacalet is one of Burgundy's most quietly radical figures — a négociant-éleveur who trained under Marcel Lapierre and brings the same natural-wine rigour to white Burgundy that Lapierre applied to Beaujolais. His Chassagne-Montrachet 'Morgeot' comes from one of the appellation's great premier cru sites: a south-southeast-facing slope with limestone-rich soils that give the wine a particular stony, almost saline backbone. Pacalet works without fining, with minimal sulphur, and favours whole-cluster pressing and long, unhurried elevage in old oak. The result is white Burgundy that feels alive rather than polished.

Philippe was clear that while yields were historically low, the payoff is in the glass. Aromatic clarity, saline finishes and finely judged tannins run through the range, and the wines show real charm already alongside the structure to age. A year where selection mattered enormously, and in Pacalet’s hands, the results are compelling.

Philippe Pacalet

Philippe Pacalet is a Beaune-based négociant who trained under his uncle Marcel Lapierre and worked at Prieuré-Roch before establishing his own domaine in 2001. He is one of the most principled natural-wine producers in Burgundy, working with minimal intervention throughout — no fining, no filtering, very low sulphur — while sourcing from growers who share his commitment to farming with care. His wines are not showy; they reward those prepared to let them breathe and to wait.

Philippe Pacalet farms and sources according to natural wine principles, working without synthetic treatments in the winery and with very low sulphur additions. He is publicly associated with the natural wine movement and trained under Marcel Lapierre, whose farming philosophy underpins his own. However, no specific certified organic or biodynamic accreditation (such as Ecocert or Demeter) has been publicly confirmed for Pacalet's operation.
