Darling Cellars is based in the coastal Darling region of South Africa’s Western Cape, where it has built a strong reputation for producing quality wines with a focus on value and regional character. The cellar was established in the late 1990s, bringing together a group of growers with deep roots in the area.
Today, the estate works with around 1,300 hectares of vines, ranging from young plantings to parcels over 50 years old. Around 95% are dry-farmed bush vines, meaning they are not irrigated and grow low to the ground. These vines naturally regulate their yields - producing less fruit in dry years and more in wetter seasons - which helps maintain concentration and balance. Their deep root systems are particularly well suited to Darling’s soils, allowing access to water and nutrients even in challenging conditions.
Vineyard work is hands-on, from pruning through to harvest, with careful bunch selection and gentle handling in the winery. While labour-intensive, this approach ensures consistency and quality, with the focus firmly on getting the best expression from each vineyard block.
